THE STORY OF DADA CIDERS BEGAN IN 2018
We had a burning desire to make our own ciders in Russia using domestic organic apples to bring people a unique taste of our country. But there was always something standing in our way.

It wasn't until we went to the drinktec trade show in Munich, Germany, in September 2017 that we knew we had to start making our dream a reality.
CIDER MAKING AROUND THE WORLD
Spain
Cider producers in Spain use exclusively unfiltered apple juice so their ciders are normally murky and cloudy
France
French makers produce ciders from pure apple juice infused with CO₂ for bubbles
England
The English prefer their ciders diluted
All-natural apple juice, no added sugar or artificial flavors – that is all we need to create our signature drink. We also keep a close eye on the fermentation process.
OUR APPROACH
HOW WE MAKE OUR CIDER
We don’t use plastic containers to create the ideal conditions for cider fermentation and maturation.

Instead, we opt for containers made exclusively of food-grade stainless steel that are temperature- and pressure-controlled to monitor the maturation process.
We inspect the quality of raw materials before manufacturing begins and then carefully observe the process using photographic equipment.
Our project made it possible to develop custom-designed pasteurizers that prolong the shelf life of our products to 180-365 days. The technology has already been adopted by numerous beverage manufacturers.
HOW WE SELECT JUICE FOR OUR CIDERS
We do not have a certain apple kind in mind. For our products, we use pressed dessert apples, which are popular in Russia.
We source apples from the orchards we have been working with for years because we want our cider to retain its distinct flavor from season to season.
Once juice is ready, we test it in laboratories to make sure that it satisfies our requirements for sugar, acidity, and tannins.

We take it further and measure incoming raw materials against six criteria.
The taste of the final product is determined by a multitude of factors, including orchard type, apple variety, season, climate, and time elapsed between apple harvest and juice production.
We attempt to control the entire manufacturing process. We are not obsessed with a specific sort of apple – but rather value consistent results.
